Pineapple Cake

crushed pineapple
4 eggs
powdered sugar
milk (preferably evaporated)
1 sick of butter
Duncan Hines Cake Mix (Butter recipe)

Allow butter for cake mix to soften at room temperature. Add eggs and butter beat until blended,
add water and cake mix (follow time on box). Bake in 2 9x9 cake pans @ 350* until toothpick
comes out clean.

** Cook crushed pineapple with about 2 tbsp of sugar for approx 10 - 15 mins slowly(straining the
juice when done). Let it cool completely.

Separate the egg yokes from the whites. Throw away whites. Add softened butter to the yokes and
blend. Add powered sugar and milk (a little at the time) blend well. Continue to add sugar and
milk (if needed). Frosting should be a smooth consistency and pale yellow in color. Once cake
layers and pineapple is cool, spread frosting in layer (rather thick) spread pineapple over top,
drizzle a small amount pf frosting. Add other layer and repeat the frosting and pineapple on top,
Also cover sides with frosting and pineapple.
